Panty & Stocking With Garterbelt is funny. Western-style animation. Loads of inappropriate jokes. And art-shifting. Not to mention the Demon Sister in episode 6. It's about two fallen angels trying to get back into Heaven despite their crude behavior. And the best part is, the creators came up with it when they were dunk off their asses. Panty is a sex addict and Stocking is a sweet-loving goth girl. Both are sisters and live with a Priest named Garterbelt and this dog-thing named Chuck.
Shiki (Corpse Demon) is a good one. Slow to start but otherwise very addicting. It's about a village and people start to die off after a new family moves into this European-style mansion. It has two main characters, Natsuno Yukki (Student) and Toshio Ozaki (the town Doctor).
GOSICK is a new one that came out this season. It's about a loli-detective. Not much more I can say without giving spoilers. She solves crime with the help of one of her class-mates who's an exchange student from Japan.
Freezing is another one that came out this season. Most people hate it. It had blood, violence, and half-naked girls fighting aliens with the help of their younger male partners. However, the censors are a real bitch.
Hellsing: Ultimate is perhaps one of the best I've ever seen. Ultimate is the OVA and is closer to the manga, it's also much better than the TV version. It involves the awesome kind of vampires, Nazi's, and lots of gory action. And, it has a plot. Not all the OVAs have been released yet. But it'll take a while for those to come out.
Hetalia: Axis Powers is, uh, you kinda just have to watch it to really understand it. But it involves anthropomorphic countries, funny stereotyping, accurate history, and all the main characters/nations are guys and are bishounen but the girls in it are uber-cute and the comedy is priceless.

Baccano! is set in NY during the Great Depression Era. It's about a variety of different things going on and seemingly random events that are actually connected. Involves immortality, gun fights, knife fights, psychopaths, a train with an odd name, and it's all shown in non-chronological order.
Corpse Princess (Shikabane Hime) is really awesome. Animated by one of the best studios ever. It's about a boy who has a strange connection to the dead. Although he doesn't realize himself. There are this girls in this Anime that are dead, but are also not dead. They are called Shikabane Hime or Corpse Princesses. They had died but reanimated for whatever reason, they are different from others like them, called Shikabane. Shikabane are driven by regrets while Shikabane Hime exist to kill Shikabane. They have to kill 108 in order to get into Heaven.
Ookami-san and Her Seven Companions makes many references to fairy tales, most notable being Little Red Riding Hood. The main character is Ookami-san (Wolf), Ringo (Red Riding Hood) and Ryoshi (the Hunter). The rest of the main cast is in this club that solves problems for others. One of the main plots is how Ryoshi is in love with Ookami. The characters are very fun and the Narrator, oh the Narrator. Lots of 4th wall breaking because of her.
Trigun is way too awesome for me to explain. Most people who watch it, love it. For all intents and purposes it's a futuristic western. Lots of gun slinging going on. You'll just have to look it up, but it's awesome!
Grenadier is like Trigun, but with boobs. Still it's enjoyable despite the main character being a total pacifist. She has gag-boobs but it's not as perverted as most Anime that has those kind. Still lots of gun slinging.
NEEDLESS is a show about little girls! Actually it's about people with super powers, many of them just so happen to be little girls. It's after WWIII and where Tokyo once was there's this place called the Black Spot. It's an action/comedy. Pretty cracktacular considering one of the main guys is a lolicon Priest. It's called Needless because the people with powers are called "Needless" as the world sees no point in having people with these powers. The powers come from a man called "The Second" and is considered to be The Second Coming. It's really quite amazing. And Eve is awesome.
