So I told this girl that I like her and she said she felt the same way.
Now the week after, we haven't talked and she kind of looks away and doesn't really respond when I say hi or whatever. Also, we did talk still after I said I liked her, but all of a sudden it's been like I never met her. Is this shyness or did I screw something up?

She might like you but not want anything to come of it. Try talking to her more, if she keeps ignoring you after then I would leave her alone to see if she comes to you.
Personally, I think one of two things has happened. Either, like what the others have said, she's embarrassed and is waiting for you to make the first move. Be confident and keep talking to her. Don't be too clingy though, that could put her off a bit. Just be the person you were before you said you liked her and if she likes you like she says she does, she'll stop ignoring you.
On the other hand, she might not like you. When you said you liked her, she may have said she liked you too so that she didn't hurt you and now she's avoiding you so that you can't ask her out of anything. It's quite unlikely that this is what she's doing but there's a small chance. I think what you should do is the same as above; be confident and talk to her and she'll either say yes or say that she doesn't want to.
